Flora Fermentation, based in Higashiomi, Shiga, has announced Mizuha, a collaboration beer with Yasui Sake Brewery in Koka. The brewery presented it as a special beer named after the water deity Mizuha-no-me-no-kami, and also shared a release tour from June 19 to 21 in Tokyo (Koenji and Kanda) and Shiga (Hikone) ahead of the planned June 22 release.
Mizuha is a 350 ml Sake Yeast Beer. Flora Fermentation says it was brewed with the well water and rice koji used in Yasui Sake Brewery's sake making, and the official store lists it at 8.5% ABV and 20 IBU. The malt bill includes Northstar Pils, Wheat Malt White, and Malted Oats, with Super Pride hops and koji as an additional ingredient.
The flavor description points to a gentle ginjo-like aroma, a clean palate, and a dry finish with depth. Flora Fermentation describes itself as a brewery telling a "story of farming and fermentation" with three brewers, and Mizuha fits that direction with a collaboration built around local water, koji, and sake yeast character.
