Sankt Gallen Brewery in Atsugi, Kanagawa, shared an Instagram post saying it was brewing day for its summer-only Pineapple Ale. The post explains that the beer is built on a dry Brut IPA base and finished with plenty of Golden Pineapple.
The brewery also points to one reason the beer feels softer on the palate: flaked oats. Unlike standard malt, flaked oats are thinly processed and can usually be added without milling. The post notes that over-grinding can cause problems with the brewery's equipment, so the oats are added directly to the mash.
As of mid-August, the brewery said it was still making both Pineapple Ale and Shonan Gold, and expects neither beer to run out before the end of September. For drinkers following seasonal releases, that means the beer should remain available through the late-summer stretch.
Sankt Gallen describes itself as a long-running craft brewery and is known for limited runs that use seasonal ingredients. In this post, the brewery again shows its approach: build from a defined beer style, then layer in fruit character and a carefully chosen raw-material process.
