And Beer Katsunuma Brewery has announced a new beer, "Bailey-A 2025." It is a fruit sour made with Katsunuma-grown Bailey A from the 2025 harvest, and its alcohol content is 7%. In the post, the beer is described as one that pairs a refreshing acidity with a sweet, strawberry-like flavor.
The Bailey A used this time was grown in the field behind the brewery. The harvested grapes were carefully fermented, then added to the base of a sour beer to finish the beer. How the fruit character unique to wine grapes is expressed together with the beer's acidity is the highlight of this glass.
And Beer began in 2017 as a brewpub in Koenji, Tokyo, then expanded its brewing base to Katsunuma in 2021 before consolidating brewing operations in Katsunuma in 2025. Rooted in Katsunuma, Koshu City, Yamanashi Prefecture, a famous wine-producing region, it continues making beers that draw on seasonality, ingredients, and ties with local producers.
The brewery is also known for not having many standard offerings and for taking on new beers almost every week. This "Bailey-A 2025" is another beer in that line. It is now being served in sequence at the brewery's taprooms in Koenji, Asagaya, and Yamanashi, and sales will end once it sells out. Keg sales have also started on the business e-commerce site for restaurants and bars, so shops interested in serving it should check there as well.
This new release uses Katsunuma grapes and turns the character of the brewery's home ground directly into flavor. Because it comes from a brewery in a wine region, the balance between fruit and acidity is especially worth paying attention to.
