Flora Fermentation began its activity in 2023 and started brewing at its own brewery in 2024 in Higashiomi, Shiga. The brewery name comes from Flora, referring to the plants and microorganisms of a place, and Fermentation. Its stated goal is to make classic beers that remain easy to drink over time.

The new beer, Witte Wieven, is a White IPA named after the white witch of Belgian folklore. According to the brewery's product notes, it layers spicy aromas from Belgian yeast with dank hop character for a beer with depth. The recipe uses Pale Ale Malt, Wheat Malt Light, and flaked wheat, alongside Loral, Waimea, Nelson Sauvin, Idaho 7, Cascade, Cashmere, and Chinook. The beer is listed at 6.0% ABV and 47 IBU.

White IPA can be a tricky style: it needs enough yeast character to feel distinct, but enough hop presence to stay modern and expressive. Witte Wieven appears designed around that balance. As a release from a brewery that continues to focus on agriculture, fermentation, and drinkability, it fits Flora Fermentation's direction well.
