Sakazuki Lab announces the still version of "Akane Sasu" and summer brews on May 31
Sakazuki Lab in Adachi, Tokyo, opened at 1:00 p.m. on Sunday, May 31. Focusing on summer sake, it lined up the still version of "Akane Sasu" and the nitro tap pour of "KISS ME," along with seasonal dishes such as a chilled white asparagus soup.

Today’s Sake
With a lineup centered on summer sake, the highlight was Chiyomusubi Junmai Daiginjo Gokyoku (Shimane). Although it uses Gokyoku, a sake rice often used for warmed sake, it was crafted into a junmai daiginjo-style expression, and was introduced as a label that conveys Chiyomusubi’s own direction of rich, umami-forward flavor.
Today’s Beer
Akane Sasu was opened as a still version. Its appearance is red, with layers of red grape, spice, wood, and Belgian strong ale-like character, and it was described as having much more depth of flavor than its light look suggests. It was also available mixed with tonic water, offering a wider range of ways to drink it.
The other beer, KISS ME, was served on nitro tap. Its defining features were the creamy, silky head that only nitro can create and the crisp drinkability from soft carbonation, with an aroma described as carrying a toasty peanut character. Twilight was already sold out at that point.
Seasonal Dish
The food offerings were Chilled White Asparagus Soup and Rice Balls with Conger Eel and Chirimen Sansho. The soup pairs seasonal white asparagus with a clam broth and is lightly finished with fresh cream for a slightly Western style, with a suggestion to enjoy it alongside the house-made almond tofu.
Sakazuki Lab’s appeal is also that guests can enjoy craft beer and sake in the same space. In this post as well, the shop carefully listed the day’s drinks and dishes, showing a composition designed for lingering over food and drinks at a relaxed pace. Its sister shop, Sakazuki Brewing, is also planning limited tap releases and food pairing days in June, continuing the group’s early-summer offerings.
