A collaboration built around a northern forest theme
FLORA FERMENTATION, based in Higashiomi, Shiga, has launched Korpokkur, a collaboration beer brewed with NOMCRAFT Brewing. The name refers to a small fairy from Ainu legend, and the beer leans into a world built around the image of a northern forest.
A saison with spruce tips
Korpokkur is a Saison w/Spruce Tips packaged in a 350 ml can. It comes in at 5.0% ABV and 28 IBU, with a listed price of 726 yen. The beer uses young shoots of Hokkaido akamatsu spruce, aiming for a crisp conifer-like aroma with a subtle fruity note reminiscent of strawberries. The grist includes Northstar Pils, Barke Vienna, Barke Pilsner, and Acidulated Malt, while the hop bill features Hokkaido Cascade and Sterling, plus home-grown rye.
A natural fit for FLORA FERMENTATION
On its official site, FLORA FERMENTATION describes itself as a story of agriculture and fermentation told by three brewers. That focus on balance and drinkability runs through its lineup, and Korpokkur follows the same line while adding a more place-driven, seasonal character. It is the kind of beer that invites you to picture the forest as much as to taste it, making it a good match for both food pairing and slow sipping.
