New release

Sakamichi Brewing, based in Tachikawa, Tokyo, continues to brew a wide range of contemporary styles, from familiar lagers and ales to more modern explorations. The brewery also emphasizes a welcoming taproom and the use of local ingredients where possible.

Its latest release, shared on Instagram, is Forest Lace / Elderflower Saison. The beer comes in at 7.0% ABV and 4 IBU, making it a very low-bitterness saison.

Flavor profile

According to the post, the beer starts from a saison base brewed with Belgian malt and careful fermentation, bringing out spicy notes of clove and black pepper. English elderflower is then added for a sweet, floral top note and a very dry finish.

That combination gives the beer a clearly seasonal character: bright and aromatic on the nose, but still grounded in the crisp, peppery structure that defines the saison style.

Tachikawa context

Sakamichi Brewing was founded in 2019 and has built a reputation in Tachikawa for approachable, well-made craft beer with room for both classic and experimental ideas. Forest Lace fits that identity well: it is seasonal, restrained in bitterness, and built around a clean, expressive flavor profile.
