Saitama-based COEDO Brewery shared the latest information on “FRESH HOP 2025” as one of winter’s notable topics. According to the post, the recipe was updated from the conventional Pale Ale to an IPL (India Pale Lager) after welcoming a new brewer. It is a seasonal brew designed around the fresh, green aroma of fresh hops and a clean bitterness.

The cans are already sold out. However, from January 29, it is once again on tap at COEDO BREWERY THE RESTAURANT, the brewery’s Kawagoe-area base, where visitors can enjoy it there once more. Alongside it, a limited-time pairing dish by Chef Suda, “Sautéed Kurobuta pork topped with Granny Smith apples,” is also being offered. The dish layers the umami and rich sweetness of the black pork’s fat with the acidity of green apple and the aroma of sansho pepper, tying them to the hop aroma.

In the official journal “MEET THE BREWER | Fresh Hop 2025” introduced in the post, an interview with the brewer in charge, Osamu Goto, is available. He speaks about the process of using the HKTS02 variety from Kobayashi Hop Farm in Hokuto, Yamanashi Prefecture, transporting it to Kawagoe under strict temperature and hygiene control, and the intended finish. Its character this time is a gentle aroma reminiscent of muscat grapes and a refreshing, grassland-like quality.

COEDO Brewery is known as a brewery that has developed against the backdrop of Kawagoe’s agricultural culture. Its approach of maintaining ties with the local community while continually updating seasonal ingredients and brewing design is also reflected in this beer. Even after selling out, continuing to present it as a dining experience seems like a practical example of how to broaden the enjoyment of seasonal limited-edition beers.
