A white pizza built around local ingredients

OIRASE Brewery featured its “Nagaimo and Scallop White Pizza” on Instagram. The dish uses Aomori-grown nagaimo, known for its crisp texture, together with scallops from the prefecture, all layered over a creamy white sauce. Black pepper is added at the finish for a gentle but noticeable accent. The pizza is offered as a single item for 1,600 yen.

The suggested pairing is Weizen

The post recommends pairing the pizza with Weizen, a wheat beer known for its fruity aroma and soft, rounded foam. The brewery presents it as a match for the richness of the white sauce and the sweetness of the seafood, making the pairing feel designed as part of the meal rather than an afterthought.

A brewery rooted in Towada

OIRASE Brewery is based in Towada, Aomori, and has been brewing since 1997. The brewery highlights the use of groundwater from the Hakkoda area, called OIRASE no Gensui, in its beers. Its restaurant serves stone-oven dishes that make use of local Aomori ingredients, and the pizza menu sits naturally within that approach.

The same post also announced “AOMORI CRAFTBEER PARK @ Aomori Port Kurashi no Marche” on June 27. The event will run from 15:00 to 20:00 at the plaza in front of Aomori City Hall's main building. Participating breweries include OIRASE BEER, KANEKU BREWERY, Kinsei Jozou, Hotaru Bi Brewing, and Be Easy Brewing, with food vendors also expected at the venue.
