Choryo releases June New Variety Set A with two new beers
Choryo Sake Brewery in Koryo, Nara is offering its June New Variety Set A online. The set pairs three bottles each of Ride The Dragon, a Temescal Brewing collaboration, and Mosaic / Superdelic WEST COAST IPA. Shipping begins on June 18, with the final shipment date set for July 3.

Ride The Dragon began as a collaboration with Temescal Brewing and is presented here as a Fruited West Coast Pilsner. Choryo rebuilt the concept from the Oakland-brewed "Ride the Tiger" version, swapping the citrus character to whole-fruit lemon in Nara. Citra, Simcoe, and Centennial Cryo bring a bright citrus profile, while lemon acidity and pithy bitterness add definition. The beer is 5.5% ABV and 29 IBU.
Mosaic / Superdelic WEST COAST IPA is Choryo's rework of a beer originally brewed in the United States with Barebottle. Built around Mosaic and Superdelic, it pushes berry, tropical fruit, and red-fruit aromatics to the front while keeping the malt character restrained and the finish dry. At 7.0% ABV and 55 IBU, it is firmly aimed at the modern West Coast IPA profile.
Based in Koryo, Nara, Choryo works across both sake and beer, and this set shows how the brewery reinterprets collaboration-driven recipes in its own style. The result is a useful side-by-side look at two different West Coast expressions: one leaning pilsner-like and citrus-forward, the other sharper, hoppier, and more IPA-driven.
