Hebisasori Brewing unveiled the first beer menu for the "Chanpuru Festival 2026 Spring" on Instagram. The brewery, which began brewing in 2025 in Makishi, Naha, is a rising newcomer that also operates its own "HSB Taproom Makishi," and it champions beer making that suits Okinawa's climate and food culture.
In this post, the brewery revealed seven of the beers that will be available at the event. The lineup spans a wide range of styles: ESB "Root Note," Brut Saison "Gold Needle Scrath," Red IPA "Amber Distortion," DDH Juicy IPA "Thaw," Italian Pilsner w/ Jasmine Tea "White Doe," American Wheat "New Trance, New Entrance," and NZ IPA "Breathless."
The brewer's featured pick was "White Doe." It is a beer that layers the crispness of an Italian pilsner with the white floral aroma and white-grape-like nuance derived from sanpin tea, and the post presents it as a beautifully finished beer down to the very last drop. The design clearly reflects attention not only to drinkability, but also to the lingering finish of its aroma.
Hebisasori Brewing says its name comes from the Year of the Snake and the Scorpio sign, and it has been developing its brand by overlapping that with a sense of place rooted in Okinawa and the brewer's own background. As a new brewery, its choice of styles that do not fit neatly into the standard mold, combined with local ingredients and character, is striking, and it heightens expectations for a pint on the day of the event.
