There’s this brewpub in Ebisu called BEER & EBISU BREWERY, which opened in 2022, and its main appeal is pretty interesting. Have you heard of "blend beer"?
Mugi
Blend beer? You mean mixing beers together?
Hop Bro
Exactly. You can blend several house-brewed beers to make a mix that suits your taste. And they even have a unique "beer diagnosis" tool that suggests combinations based on your preferences.
Mugi
Whoa, what is that? So you can make your own original beer? That sounds fun!
Hop Bro
The base beers are great too. Juicy IPA is an unfiltered draft beer fermented for about three weeks; EBISU Draft blends two kinds of malt and two kinds of hops; Black is a roasted porter with gentle bitterness. The Pilsner is an unfiltered finish made with Mt. Fuji spring water.
Mugi
I see! You could even mix porter and IPA, right? Each one has such a different personality, so the combinations feel endless.

It’s operated by a company called Broad Edge Factory, and the mastermind behind it is Ei Maruoka, the company’s representative. It’s just a two-minute walk from the west exit of Ebisu Station, and you can enjoy it together with a dining menu centered on meat dishes.
Mugi
A brewpub right by the station in Ebisu! And craft beer with meat sounds like the perfect combination.

Also, there’s a wine shop on the third floor with a very generous system that lets you bring in about 900 kinds of wine. Bottled takeout is available by reservation too, so you can buy some for home.
Mugi
A brewery that even allows you to bring in wine? That’s incredibly open-minded! I want to go try the blend beer experience!
