Did you know there’s a brewery on the B2 floor of Toranomon Hills that feels like a secret factory? It’s called Dam Brewery Restaurant.
Mugi
Wait, a brewery underground at Toranomon Hills?! Right in the middle of the office district!
Hop Bro
Exactly. And it’s produced by Kenji Sakamoto of August Beer. He used to be at Kirin Brewery and even served as vice president of Kirin USA. He jumped into the craft beer world after knowing the front lines of the big industry inside out.
Mugi
No way! From vice president of a major beer company to craft beer? That’s quite the leap.
Hop Bro
And the flagship beer is “daily paper -Saison-.” The name means “daily newspaper.” The concept is a beer you’ll want to drink every day, and it’s a saison whose flavor changes with the seasons. It’s light and dry, but with a soft fruity, spicy aroma.
Mugi
Wow! If it changes with the seasons, that means you can enjoy a different taste every time you go, right?
Hop Bro
Another interesting one is “dawn brew -Brown Ale-.” It’s a coffee brown ale made in collaboration with Little Darling Coffee Roasters, with roasted bean aroma layered over malt in a single glass.
Mugi
A coffee and beer collaboration! dawn brew sounds like morning coffee.
Hop Bro
Exactly. It means “the start of a new day.” And the name “Dam” is interesting too. Back in the Edo period, there was an urban dam in Toranomon that supplied water to the townspeople. Playing on that history, the idea is to make this a place that now connects people through beer.
Mugi
It’s lovely to connect the history of the land to beer...! And the space was designed by Masamichi Katayama of Wonderwall, while the food supervision was handled by Fumio Yonezawa, the first Japanese sous-chef at New York’s Michelin three-star Jean Georges, right? Isn’t that a bit too luxurious?
Hop Bro
That’s what makes this place so impressive. The beer, the food, and the space are all created in earnest by true professionals. Stopping by after work for a “day light -IPA-” and enjoying its grapefruit-like citrus aroma sounds perfect, doesn’t it?
