Jazz Brewing Fujino has a world all its own. It’s a microbrewery inside a facility called "Yuzunosato Fujino," at the foot of Mount Jimba in Fujino, Sagamihara, and owner Osamu Yamaguchi makes everything by himself.

About 100 liters per brew, or roughly 300 bottles. He brews once a week, so he really only makes what he can handle. He got his license to produce happoshu and started in 2018.

He was a sound engineer. That’s where the name "Jazz" comes from too. He aims to brew beers where the ingredients come together in harmony, like a jazz session. Even the logo, designed by a local graphic designer, expresses harmony through overlapping petals.

And their flagship beer, "AMP UP IPA," is especially unique because it uses tea leaves from Sanogawa as part of the aroma. The richness of the malt and bitterness of the hops are softly layered with the fragrance of tea.

Another regular, "VOX POP," is a white ale that combines American hops with local yuzu. It’s light, with bright citrus aroma drifting through. And all of their beers are unfiltered, unclarified, and bottle-conditioned.

When you bottle beer after fermentation and seal it, the still-living yeast wakes back up inside the bottle and naturally creates carbonation and alcohol, which dissolve into the liquid. Instead of forcing gas in, the foam is made only by the power of the yeast. That’s why it has a fine texture and a gentle aftertaste.
