JAZZ BREWING FUJINO, a tiny brewery in the Sanogawa area of Sagamihara’s Midori Ward, has shared an update on a new pilsner in the making. The beer is being brewed with barley grown in Fujino, a local ingredient cultivated by a farmer who avoids pesticides and chemical fertilizers and has spent years building healthy soil.
Founded in 2018 at the foot of Mt. Jinba, the brewery is known for working closely with its surroundings. It uses the clear water of the Sanogawa stream, and it brews in an unfiltered, unfined style that aims to leave the character of the ingredients and fermentation intact. That approach gives the brewery a strong sense of place.
The new beer is a pilsner, a lager style that is usually pale in color and valued for its clean drinkability, crisp bitterness, and refreshing finish. In the post, the brewery also says the local barley was heated in an oven at 85°C, underscoring how carefully the raw material is being handled.
