He originally worked in a completely different field, but after reading a feature on brewers in a free paper, he apparently thought, "This is it!" and got fired up. From there, he jumped into Sanktgallen in Atsugi and trained there for three years.

He became independent in 2018 and opened a brewpub in Tsujido. They installed equipment from Slovenia's Brewiks, so it's a small-scale operation with 240 liters per batch. That's why they change the recipe every batch. He himself says he's aiming for beer you can keep chugging.

They use American, New Zealand, and Czech hops depending on the beer, and the malt is sourced broadly from the UK, Germany, and Canada. The brewing water is local Chigasaki water. And the perfect pairing is pizza baked in a serious wood-fired oven.

Inside, the brewing equipment is fully visible through glass, giving it a casual atmosphere. It's an 8-minute walk from the south exit of Tsujido Station, so it's easy to drop by while enjoying the Shonan air. With Sanktgallen-trained skills and the freedom to brew however they like, it's truly a hidden-gem brewery in Tsujido.
