A collaboration between a Tsuno smokehouse and TOSACO

Kochi Campagne Brewery produces TOSACO craft beer in Kami, Kochi. The brewery focuses on using local ingredients and creating beers that enrich the dining table while supporting the regional economy.

The workshop featured here is a collaboration with CaCooo, a homemade smokehouse based in Tsuno. CaCooo specializes in small-batch smoked snacks such as smoked nuts and cheese. Participants learn how to choose smoking chips and finish their own smoked foods.

A 50-minute experience with two drinks

Participants place their chosen ingredients in a smoker, select a wood chip, and wait while the smoke develops. During the process, they can choose drinks and enjoy the finished snacks with TOSACO beer. The approximately 50-minute program includes two drinks, with beer, non-alcoholic beer, and other options available.

Cherry and apple chips are suitable for a wide range of ingredients, while whisky-oak chips add a sweeter aroma. Cheese and nuts are natural choices, but experimenting with unexpected ingredients is part of the appeal.

Beer beside the Monobe River

TOSACO TAP STAND is a small beer stand attached to the brewery in Kahoku, Kami. Its nine taps feature core beers as well as limited releases, including fresh draft TOSACO. A garden overlooking the Monobe River provides a relaxed setting for enjoying both the beer and the smoke.

Founded in 2017 by Shin’ya Setoguchi after his move from Osaka to Kochi, Kochi Campagne Brewery has developed beers inspired by local ingredients such as yuzu, rice, and Japanese pepper. This collaboration connects the brewing culture of Kami with Tsuno’s smoked-food craft, giving visitors a flavorful way to discover local producers.
