Iwami Bakushu and KOUNOU COFFEE Brew Coffee Cherry Beer Together
KOUNOU COFFEE's August 24 Instagram Reel introduced a collaboration beer with Iwami Bakushu: Coffee Cherry Beer. The brew uses cascara from coffee cherries, layering fruitiness and a gentle acidity into the glass.
Iwami Bakushu 温泉リゾート風の国醸造所 is a brewpub in Sakurai-cho, Gotsu, Shimane. In KOUNOU COFFEE's Reel, the brewery is shown working on a collaboration beer called Coffee Cherry Beer.
What stands out is the use of cascara, the skin and pulp from coffee cherries, rather than coffee beans. By bringing that material into the brewing process, the beer gains a fruit-driven aroma and a soft acidity, giving it a distinctly craft-minded profile.
The post also frames the beer as an extension of KOUNOU COFFEE's farm-to-brew idea, made together with Iwami Bakushu. KOUNOU COFFEE notes Friday and Saturday night cafe service, dine-in only, which makes the project feel rooted in direct, place-based drinking culture.
