New Beer Unveiled in Daikanyama
Craft beer bar "Bibibi." will hold a two-day event on Friday, May 22 and Saturday, May 23 to unveil a new beer brewed at "Shimokawa Mori Brewery" in Shimokawa, Hokkaido. At this homey beer pub in Daikanyama, the project reflects the shop’s commitment to letting guests enjoy beer together with the story behind the people who make it.
This beer project was launched to mark a milestone: the 50th birthday of co-owner Hibiya. Brew day was carried out while visiting the site in person, and the beer is being presented as one that also incorporates fir and birch sap. Brewing was handled by Takashi Nakamura of Shimokawa Mori Brewery, with supervision from Katsuhisa Takahashi, formerly of Bifuka Shirakaba Brewery, who has collaborated on many projects with the team before.
May 22 Is Reservation-Only, May 23 Is Casual
Friday, May 22 is a reservation-only event limited to 20 guests. While tasting the finished beer, guests can hear directly from the brewer about why this beer was made, how the ingredients were chosen, what happened behind the brewing process, and how it connects to Shimokawa and Bifuka. A brewer interview via a large monitor in the shop connected to Hokkaido is also planned, making this a very in-depth session.
In addition, in collaboration with the Keio University Faculty of Economics, Keiichi Kawai Laboratory, the event will also try a system in which the participation fee is set according to the participant’s own intention.
The following day, Saturday, May 23, requires no reservation. Guests can toast at 6 p.m. and enjoy the new beer in a relaxed setting until around 8 p.m. "Bibibi.", located just a short walk from Daikanyama Station, is easy to enter even alone, and is a place for people who want to savor not only the taste of the beer but also the stories of the land and the people behind it.
