Toki Brewery in Sado, Niigata introduced two new beers on Instagram: `hello,island v3.0` and `server farm v1.0`. One is the long-awaited return of the `hello,island` series after about three years; the other is a collaboration with SORAFACTRY, a food brand launched by kitchen105 in Kashiwazaki.

The new version shifts away from the earlier Hazy IPA format and returns as a 5.0% Hazy Pale Ale. In the post, the brewery lists Mosaic, Citra, Simcoe, CryoCitra, Eldorado, and Nelson Sauvin among the hops, while noting that the actual low-temperature dry hop uses Simcoe, Citra, and CryoCitra. No lactose is used; instead, the brewer keeps a gentle sweetness through mash temperature. The flavor profile is described as citrusy and grassy, with soft sweetness from British ale malt and a tea-like finish.

`server farm v1.0`


`server farm v1.0` is a 5.0% Farmhouse Ale made with Ehime-grown yuzu. The peel is added in both the hot side and cold side to build aroma, flavor, and a subtle aftertaste. The post says SORAFACTRY is a food brand that values connections between people, towns, and ingredients under the same sky, and that idea is reflected in the hot-air-balloon motif.
