T0KI Brewery in Sado City, Niigata, has announced the release of two new beers: “Mano v3.1 β” and “Code.” The pair takes distinctly different approaches, combining Japanese sake culture with lager brewing in one beer and showcasing hop-driven American craft beer character in the other.

“Mano v3.1 β” is described as a Japanese Sake Lager. Its base combines Pilsner, wheat pale and sour malt profiles with NovaLager yeast and Saphir hops. Japanese sake is used as a subtle accent. With an ABV of 7.0%, the beer offers a substantial drinking experience while maintaining a dry and refined finish. T0KI Brewery recommends serving it in a wine glass and enjoying it alongside Japanese cuisine.

“Code” is a 6.0% West Coast IPA. The brewery says it delivers a juicy, expressive aroma reminiscent of stone fruit, mango and pineapple. The recipe uses HBC 682, Galaxy, Vic Secret and Citra LUPOMAX hops, supported by Pilsner, 2-row and extra pale malts. BRY-97 yeast was selected for the fermentation.

T0KI Brewery operates a small brewery in the Ryotsu area of Sado Island and focuses primarily on American-style craft beer. The brewery’s official website explains that its beers are made as limited releases rather than fixed flagship products, allowing each visit to offer something different.
