The craft beer brewery Tokumanjiri Hinomoto Brewery in Kotoura Town, Tottori Prefecture, has started selling its limited-edition product "Shito." The release date is April 21, 2026. This beer is a sour ale made with yuko, and according to the brewery, its defining features are a soft acidity and a quietly lingering yuko finish.

"Shito" appears to be designed with overall balance in mind rather than pushing a strong, distinctive character to the forefront. The announcement also describes it as "a beer with a balanced profile that pairs well with meals," suggesting it is intended not only for slow sipping on its own, but also for enjoying alongside dishes. Tokumanjiri Hinomoto Brewery began brewing in 2022 at the izakaya "Sakaba Gin" in Kotoura Town. The brewery aims to make use of Tottori's blessings in craft beer and contribute to collaboration with the local community as well as the spread of locally produced, locally consumed practices. It has also previously produced beers using skim milk powder associated with Kotoura Town's dairy industry, as well as naturally derived mulberry leaves.
