Hiruzen Brewery TsuchitoMizu, based in the Chuka area of Hiruzen, Maniwa, Okayama, will visit Micotoya House in Yokohama on November 15 and 16. The brewery announced that it will once again grill eel at the venue. TsuchitoMizu is a small brewery that uses Hiruzen’s natural water and wild yeast collected from the surrounding environment. Brewing began in the summer of 2023. The brewery works with organic and naturally grown ingredients, as well as locally grown hops, to create beers that reflect the character of the land.

Its sour ales are known for fruit-like aromas, refreshing acidity, gentle carbonation, and a distinctive character created by wild fermentation. These beers can offer an appealing contrast to rich, savory foods such as grilled eel, cutting through the richness while adding layers of acidity and aroma.

Micotoya House is associated with Micotoya, a producer and retailer focused on naturally grown and heirloom fruits and vegetables. The two-day event will bring together Yokohama’s food culture and TsuchitoMizu’s fermentation-focused approach from Hiruzen.
