Hiruzen Brewery Tsuchi to Mizu in Maniwa, Okayama, has announced the release of its vintage ale “V-11.” The product name and release announcement were shared through the brewery’s official Instagram account.

The brewery’s vintage ale series is made by aging a lactic-fermented ale in oak barrels. Combining wild yeast fermentation with extended wood aging allows acidity, yeast-driven aromas, and oak character to develop together, creating a more complex profile than a beer intended for immediate consumption.

Previous releases in the series have used a method in which part of the barrel is bottled, while the remaining beer is blended with younger ale and aged further. This approach gives the beers a sense of continuity and time that is difficult to achieve in a single, isolated batch.

Hiruzen Brewery Tsuchi to Mizu brews in the Hiruzen and Chuka area of northern Okayama. The brewery uses natural water from Hiruzen and wild yeast collected from the surrounding environment. Its brewing philosophy is closely connected to the local landscape and to the maker’s work in natural agriculture.
