Adding a Twist to IPA with the Idea of "Dry-Adding" Sichuan Pepper

Toki Brewery's new "IPA Pepper Hook v1.0" is a beer designed as an American IPA w/ Sichuan pepper. According to the published information, it uses an approach in which Sichuan pepper is added during fermentation of the American IPA. In other words, it is a kind of "dry Sichuan pepper" rather than a "dry hop" approach, a recipe intended not to deliver sharp intensity, but to shift the aroma and finish just a little.

The hops are Columbus, Elixir, Riwaka, and Citra. At the core is the bright citrus character of New Zealand hop Riwaka, layered with the fresh citrus aroma of Citra. Added to that is the citrusy and earthy tone from Sichuan pepper, leaving an impression at the end of the drink that it is "a little different from your usual IPA." ABV is 6.0%.

The Origin of the Name and the Collaboration Credit

The name "Hook" reflects the idea of a "hook" that intervenes partway through a process and changes its behavior. The concept of inserting Sichuan pepper into an existing IPA design and changing the aroma and finish is directly reflected in the name. The page also includes a collaboration credit for KOSENJIN SUMMIT.

A Beer in Toki Brewery's Context

Based on Sado Island in Niigata Prefecture, Toki Brewery develops craft beer centered on American styles. On its official website, it states that "all beers are limited releases," and emphasizes brewing that reflects whatever challenge it is taking on at the time. This "IPA Pepper Hook v1.0" is also a release that shows the brewery's experimental side, preserving the grammar of a standard IPA while altering its outline through the way the ingredients are used.
