April 3 Tap List

Hayama, Kanagawa's 15brewery announced five beers for Friday, April 3. The shop is takeout only, and its hours are 14:00-19:00. The lineup stands out for making use of local ingredients and baguettes from a bakery.

That day's lineup consists of the Belgian-style beer Bottom of the Swamp, Stout, the fruit beer Orange Ale, the wheat-heavy Wheat Land, and Raw Hazy IPA. Because a wide range of styles is lined up all at once, it makes it easy to compare the brewery's brewing direction.

Bottom of the Swamp is built with wheat malt, orange peel, coriander seed, chamomile, cloves, lime from Owase in Mie Prefecture, and honey from Hachigoya in Nagai, Yokosuka City, creating a beer where sweetness, acidity, and spice notes overlap. Stout emphasizes deep richness and a jet-black pour, while Orange Ale is said to be characterized by a strong orange-derived aroma and acidity.

Wheat Land is brewed by adding plenty of wheat malt to barley malt and finishing it with hops that carry a white-wine-like aroma for a light, easy-drinking finish. Using baguettes from Miura Bakery Mitsumugi is another distinctly local touch. Raw Hazy IPA also uses the same baguette and layers citrus and pine-needle aromas and bitterness onto a Raw Ale method that does not boil the wort.

If you want to follow 15brewery's individuality in Hayama, this tap list, which shows how local ingredients are turned into beer, is a useful clue to the shop's direction.
