Sakurazaka Brewery in Naha, Okinawa, has introduced an initiative to use star fruit that could not be sold as a beer ingredient. In its Instagram post, the brewery presents brewing as a way to give otherwise unsold fruit a new purpose.

Star fruit is known for its distinctive shape: when sliced, it forms a star. It is enjoyed in warm regions such as Okinawa, but fruit can remain difficult to sell for reasons including appearance and distribution conditions, even when it is suitable for use. Turning such fruit into beer offers another way to make use of local agricultural products.

Based in Naha, Sakurazaka Brewery is an Okinawan brewery that focuses on the connection between beer, place, and local ingredients. This project highlights that approach by giving star fruit a new role and inviting drinkers to experience the ingredient in a different form. Its aroma, acidity, and finish in the finished beer will be of particular interest to beer fans.
