Niigata's Toki Brewery in Sado City has announced its first lager, "Await v1.0." The style is Italian Pilsner, and the ABV is 5.5%. Its defining feature is a design that aims to balance the savoriness of malt with a sharp, clean bitterness.

From a small brewery in the Ryotsu district of Sado Island, the brewery has been releasing distinctive beers as limited products. On its official website, it also carries the motto, "A drop of craft beer to refresh a moment," and continues brewing with Sado's natural scenery and local atmosphere as its backdrop. This new "Await v1.0" is also a beer that strongly reflects that approach.

Brewing was done in the harsh cold of February, and the beer was completed after waiting for spring to arrive on Sado. The name "Await" layers in the meaning of waiting for asynchronous processing to finish, resonating with Sado's sense of time as it moves from a long winter into spring. Another notable point is that, rather than dry hopping, the brewery carefully drew out the hop's potential only through the whirlpool stage.

Rather than a beer that pushes aroma to the front, this is likely a beer that quietly builds malt character and hop-derived bitterness within a clear drinking profile. Even the explanation, which overlaps with the image of mountains waiting for the snow to melt, conveys that this is a lager that values the beauty of its outline more than flashiness. For those who want to enjoy a calm finish different from IPAs and hoppy ales, this is an intriguing new release.
