Chichibu Beer in the tap feature

Bibibi., a beer pub in Daikanyama, Tokyo, has published a new Instagram post in its “brewery currently on tap” series. This installment focuses on Chichibu Beer, a brewery founded in 2017 in the Yoshida area of Chichibu City, Saitama.

The post and the linked note article highlight the story of founder Hiroshi Dan, who was born in Hakodate. After graduating from technical college, he spent years working in civil engineering, including disaster recovery, bridge design, and highway repair. Even while building that career, he felt out of sync with the industry’s constraints and decided to leave his job at 27. Because he already loved drinking, he kept gaining experience in bars and restaurants before eventually moving toward brewing in Chichibu.

The note article also explains that a dormant set of brewing equipment found in an old sake brewery became the trigger for launching the brewery. From there, Chichibu Beer developed regionally rooted initiatives such as barrel-aging beer in Ichiro's Malt casks and collaborating with a local cheese maker.
