HOJO Brewing & Stays, based in Matsuyama, Ehime, has listed a new product, Sour Saison, in a six-bottle set on its online shop. The 5.5% ABV Specialty Saison combines gentle lactic acidity with a crisp, white-wine-like finish from Nelson Sauvin.

The brewery is located in the Hojo area of Matsuyama, Ehime, facing Monchichi Coast, and is known for being extremely close to the sea. In addition to the brewery, it operates a taproom with ocean views and a guesthouse on the second floor, letting visitors enjoy craft beer alongside the setting.
According to the product description, Sour Saison centers on gentle lactic acidity, followed by the dry, refreshing character typical of saison. It uses Nelson Sauvin as a single hop, giving the beer a clean, wine-like edge. The brewery also notes that the beer changes as it warms up, with yeast and hop character becoming more expressive over time.
