The brewery frames its work around a simple question: whether each beer contributes to the future of Shimokoshiki. That approach has shaped its lineup from the beginning, with past releases built around local ingredients such as long-leaf coriander-like herb, daidai citrus, hop-growing efforts, and other island-born materials. Even after starting island-based brewing in June 2025, that direction has remained consistent.
For this release, the key ingredient is island lemon harvested early in the year. The beer is designed around a bright citrus aroma, gentle acidity, and a light bitterness, with the session style keeping the alcohol level modest.
