This dish began as meat that was originally intended to become kakuni, but before long it had taken on a finish somewhere between pulled pork and rillette. After searing it, the meat was simmered in sake, Shaoxing wine, and black mate tea, then seasoned with house-made smoked soy sauce and house-made smoked honey. Rather than pushing the smokiness or mate tea notes too far forward, it prioritizes overall balance, making it a trial dish that feels very much like the owner.
It is planned to be served bruschetta-style, at 500 yen for three pieces and an additional 150 yen per piece. By turning it into something easy to snack on, it is structured to pair well with beer.
