Inkhorn Brewing unveils anniversary Hazy Double IPA Aether
Inkhorn Brewing, the Mejiro, Tokyo brewery, has introduced Aether as one of its fifth-anniversary beers. The 8.5% Hazy Double IPA leans into tropical hop aromatics, firm bitterness, and a fuller body.
Inkhorn Brewing, based in Mejiro, Toshima Ward, Tokyo, has introduced Aether as one of its fifth-anniversary beers. The beer is a Hazy Double IPA at 8.5% ABV.
According to the brewery, the hop profile leans tropical and stone-fruit-driven, with pineapple, orange, yellow peach, and mango notes, plus a dank edge associated with Nelson Sauvin and Riwaka. The beer is designed to keep the body substantial while using bitterness to keep the finish in balance, so it reads as full and hazy without becoming heavy.
The brewery describes its anniversary beers not as a summary of the past year, but as a way to carry the experiments of the current brewing year into the next one. That approach fits Inkhorn Brewing's Mejiro operation, which continues to release beers that explore different directions rather than staying within a fixed template. Aether is presented in that same spirit.
