Await

The newly released 'Await' from Toki Brewery is an Italian Pilsner and the brewery's first lager. It has an ABV of 5.5% and an IBU of 11. It uses Columbus, Saphire, and Calista hops.

It was brewed in the severe cold of February. After a maturation period, it was completed by waiting for the moment spring arrived in Sado. One hallmark is that no dry hopping was done; instead, the hop potential was carefully drawn out only through the whirlpool process. The aim is to balance the savoriness of the malt with the crisp bitterness typical of a lager.

In terms of flavor, it evokes the mountains of Sado waiting for the snow to melt: quiet yet with a firm, transparent character. Rather than pushing with flashy aroma, it is designed to be enjoyed through cleanly defined bitterness and the depth of the malt. While grounded in the polished, refined style of an Italian Pilsner, it can also be seen as a beer that layers in the feel of the local climate and the changing seasons.

The name 'Await' comes from the keyword used to wait for results in asynchronous processing. It directly reflects the story of a lager that is completed only after enduring a long, harsh winter and waiting for spring to arrive.

True to Toki Brewery's base in Sado, Niigata, this new release ties the region's seasonal atmosphere into the beer's design. It is a release that will appeal not only to lager fans, but also to anyone seeking a clean bitterness and a calm, restrained aroma.
