A New Expression in the Collaboration with Kaze no Mori

The craft brewery Nara Brewing, based in Nara City, has announced "UNDERWATER:LUMINOUS," a new release born from its collaboration with the sake brand Kaze no Mori. Like the original "UNDERWATER," it is brewed with sake yeast, brewing water, and soyashi water, but this time it is designed to leave a clearly noticeable malt-derived sweetness and to emphasize its acidity more sharply.

A Bottle with Sharpened Aroma and Flavor

In the post, the finished beer is introduced as having a refreshing aroma reminiscent of honey-filled apples and ramune. On the palate, it is described as sweet and tart, with just the right amount of carbonation for a pleasant, easy-drinking finish that makes you want another glass. While staying true to the ingredients associated with Kaze no Mori, the fact that it takes a different direction from the previous release seems to be what defines "LUMINOUS."

First Shipment Stores Span the Country

The first shipment stores are spread across liquor shops, department stores, and specialty stores in Tochigi, Chiba, Tokyo, Kanagawa, Niigata, Nagano, Shizuoka, Aichi, Shiga, Kyoto, Osaka, Nara, Tokushima, and other areas. Within Nara Prefecture, it is being listed at places such as "Agriculture and Fermentation Zen," "Kintetsu Department Store Nara Branch Yamatoji," and "Nishinokyo Jizake-dokoro Kitora," making it easy for local drinkers to find. Online, it is scheduled to go on sale at the Nara Brewing online store from 12:00 p.m. on April 3.

A Familiar Pattern of Nara Brewing Collaborations

Founded in 2017 and based in Kitanosho Nishi-machi, Nara City, Nara Brewing is a brewery that emphasizes a wide range of beer expression and a strong awareness of regional identity. Efforts like this one, which transplant sake-making ingredients and ideas into beer, are a good example of the brewery's strengths in collaboration. It is a beer that lets you enjoy how the same ingredients can be perceived differently as you move between sake and craft beer.
