A Sake-Lees Flavor Tailored for Winter

The craft brewery Kishiwada Beer, based in Kishiwada City, Osaka, will release a six-bottle set of its new winter flavor beer, Kasumai (Hakumai), made with sake lees. Sales will begin on November 10, 2025, and the product will be available in limited quantities. The price is 3,960 yen (tax included).

Kasumai is a beer made with sake lees from Isaka Sake Brewery, a sake brewery in Senshu-Kishiwada with a history of more than 200 years. While last summer's limited-edition product, Sake Lees Rokko Oroshi, had a crisp, clean finish, this time the brewing method was revised to create a rich flavor that pairs easily with warm winter dishes.

The name of the product also comes from white rice, the raw material used to make sake lees. Sake lees are likened to snow, and the beer was named Kasumai based on the image of white flakes dancing through the air. The label also uses a simple white-based design, bringing the seasonal feel to the forefront.

In the flavor description, it is said to feature a lightly sweet aroma of sake lees, a soft and pleasant mouthfeel, and solid richness. The style is flavored beer, the alcohol content is 5%, and the volume is 330 ml. It must be kept refrigerated, and the shelf life is six months from the date of production.

Kishiwada Beer is a brewery that continues to create distinctive beers based in its local Kishiwada community. This new release, which makes use of ties with a local sake brewery, deserves attention as a beer that layers the Japanese ingredient sake lees into the enjoyment of craft beer.
