Wild yeast drew attention at the venue
Tsuchi to Mizu, based in Chuka, Hiruzen in Maniwa, shared an update from the final day of Okayama Hawa-koi Beer Marche at Shimoishii Park in central Okayama City. In the post, the brewery said its beers received a stronger reaction than expected at the event.
The brewery is known for making beer with Hiruzen spring water and wild yeast collected from the local area, using mostly organic ingredients. Its core lineup centers on sour ales and vintage ales, with flavors shaped by the local water, air, and microorganisms around the brewery. Since starting production in 2023, it has built a reputation for a style that clearly reflects its place of origin.
The post also suggests that the team spent considerable time explaining the beer to visitors, and that the response at the festival confirmed there is growing interest in its approach. At a large beer event, distinctive beers often stand out quickly, but Tsuchi to Mizu’s background gives those beers an added layer of context for drinkers.
For the final day, the brewery added a limited 50-pour hop-top-up service. It was a small but fitting detail for a brewery that focuses on aroma, fermentation character, and the expressiveness of wild yeast.
