Toki Brewery's new release, posted on Instagram, is "Nashi cache v1.0". According to the post, it is a white ale made with Japanese pears, born from a triple collaboration between Zenmaru Corporation × Senroku Farm × t0ki brewery.

Basic Beer Specs

- Style: White Ale w/ Japanese pear
- Malts: Pilsner, Wheat, Flaked Oats
- Hops: EKG, Nelson Sauvin
- Others: Japanese pear
- ABV: 5.0%

In the post, the drinking occasion is described as "the first glass, just as the dishes start coming to the table." The beer is designed for an easy, light introduction, with a clear role as a food-pairing beer.

Background of the Collaboration

For this brew, 80 kg of off-spec Japanese pears grown by Senroku Farm were used. Toki Brewery says this is the largest amount of fruit it has ever used. The composition layers the gentle fruit flavor of Japanese pear onto the floral fermentation aroma characteristic of white beer, aiming for a calm, refreshing finish.

Zenmaru Corporation operates several restaurants in the area around Niigata Station, while Senroku Farm is introduced as a long-established farm in Niigata City's Konan Ward that grows agricultural produce, making this a project that feels like the local "food" connection has been turned directly into liquid.

Points from the Brewery Context

On its official website, Toki Brewery presents itself as a microbrewery on Sado Island, focused on "special craft beer you can only drink at that moment." In addition to its own beer, the taproom also serves guest beers, and a collaboration release like this seems well aligned with the brewery's approach of "editing" the local scene.
