Toki Brewery, based in Sado, Niigata, introduced three new beers in an Instagram post on June 16. The lineup includes Over Clock v1.0, the brewery's first Double IPA; Elixir v2.1, a blonde-style ale; and Currying v1.0, a spice ale made with a curry shop partner.
The lineup
- Over Clock v1.0: A Double IPA at 8.0% ABV and 68 IBU. The brewery says it tried a double-mash approach, then dry-hopped with CryoCitra, CryoIdaho7, and Mosaic. The result is described with dank notes, plus tea-like and berry-like aromas, and a strong bitterness.
- Elixir v2.1: A refreshed version that changes the base malt to bring out more of Elixir hop's tangerine and passionfruit character. The beer is framed as a bright, easy-drinking ale with fruitiness, acidity, malt character, and lively carbonation.
- Currying v1.0: A collaboration with CurryShop B. near Niigata Station. Built as a spice ale, it uses cinnamon, ginger, clove, cardamom, fennel, and Assam tea, aiming for a beer that works alongside curry.
The naming also reflects Toki Brewery's style. Over Clock points to overclocking, Elixir references the game item, and Currying plays on curry and currying from programming. The post shows a brewery that likes to connect brewing technique, software language, and drinkability in the same release.
