Miyazaki Phoenix Brewing

Kazutoshi Adachi, who founded Miyazaki Phoenix Brewing, is originally from Aichi Prefecture and used to work in sales for a manufacturer in Nagoya.

He was deeply moved by craft beer he drank at a pub in Nagoya, and from there he visited breweries in Seattle and Portland in the U.S., drinking more than 100 kinds of beer. It seems he fell in love with how each place was run in a way rooted in its local community.

While training at a brewery in Miyazaki, he came to want to open his own place in this region, and he moved there from elsewhere in Japan. The name "Phoenix" comes from Miyazaki's prefectural tree, and it carries his resolve to put down roots in the community.

Their signature beer, "Thanks Green's Pale Ale," is brewed with the goal of creating a flavor you never get tired of, no matter how many times you drink it. Phoenix IPA is an IPA with firm bitterness and a bright aroma, made with three American hop varieties: Citra, Mosaic, and Cascade. They also make Blue Island Wheat and Johnny Porter.

What's more, they also make craft hard cider, which is rare in Miyazaki. It isn't common for a brewery to make both beer and cider, so even people who don't usually drink beer can enjoy it together. Adachi's hope is not just to create a place where people drink beer, but a local community hub where anyone can casually stop by.
