Do you know SHIKI BEER? It's a brewpub about a 2-minute walk from Mizuhodai Station, and the brewer, Toshiharu Yano, has an incredible background.

He used to work in architectural design and interior design. He's from Hiroshima, studied brewing at Iwami Beer in Shimane, got his license in 2018, and started his own brewery.

And here's the thing: his design sensibility comes through in the beer too. The biggest feature is that every beer uses orange peel from his own homegrown amanatsu citrus. What's more, it's grown without pesticides or fertilizer, and he even picks off insects by hand.

Exactly. They also grow sansho pepper, coriander seed, and chestnuts on their own, and eventually they want all their adjuncts to come from sustainable local materials nearby. They make about 20 types a year.

The signature is the aroma from Belgian yeast fermentation. They make beers around the fruity aromas from the yeast and the roasted character of the malt. Add the homegrown orange peel to Belgian-style ales, and you get a flavor you can't find anywhere else.
