Hakuto Brewing, a brewery established in Murayama City, Yamagata. Its origin story is actually pretty interesting.
Mugi
Hakuto? As in white rabbit?
Hop Bro
Exactly! When you look at Murayama City on a map, it's shaped like a rabbit. From that came Hakuto, meaning white rabbit. It also ties into the white rabbit of Inaba from Izumo Taisha, and carries the meaning of bringing people together.
Mugi
Wait, the city is shaped like a rabbit!? That's adorable! So what kind of people are making it?
Hop Bro
It's a duo. Takafumi Yuki was originally a roaster at a coffee shop called Rabbit Village Coffee. The other person, Mr. Kaito, is a designer. They teamed up across industries and even launched the brewery through crowdfunding on CAMPFIRE.
Mugi
A roaster and a designer!? They started from a place that has nothing to do with beer.
Hop Bro
That's exactly why the lineup is so distinctive. There's a coffee amber ale made with coffee beans roasted by Yuki himself, a rose red ale made with Murayama's specialty roses, a rice white IPA made with local rice, and a buckwheat saison created together with a soba farmer.
Mugi
A rose beer!? That sounds so stylish! A coffee beer brewed by a coffee roaster is just too convincing...
Hop Bro
The brewery is a renovated former garage, and it uses the 'Iwami-style brewing method' learned from Iwami Beer in Shimane, a method optimized for small scale and limited space. It's a style of starting small and growing together with local farmers.
Mugi
Connecting drinkers, brewers, and farmers - that's the ideal form of craft beer. Now I really want to visit Murayama!
Hop Bro
A brewery where a roaster's palate and a designer's aesthetic come together - I'm really looking forward to what comes next.
