A seasonal ale built around white peach and rosemary

Sakazuki Brewing in Adachi, Tokyo, announced a pairing day centered on a new seasonal beer and a matching food item.

The featured beer was “Natsu no Kioku” White Peach & Rosemary Ale. Made with white peaches sourced from a peach grower in Kagawa, the annual seasonal beer received a rosemary-led twist this year. The brewery described an aromatic progression in which refreshing herbal notes appear first, followed by the sweet, juicy character of white peach.

Rather than relying solely on fruit sweetness, the rosemary adds a cooling, herbal dimension to the ale. This gives the beer a lighter and more layered profile while retaining the malt base expected from an ale.

White peach meets four kinds of cheese

The pairing food was a white peach quattro formaggi pizza. It combined Gorgonzola, Parmigiano, mozzarella, and Gruyère with butter-sautéed white peach, roasted walnuts, and honey. Full-size orders were also available.

The rich, savory character of the cheeses was balanced by the peach’s sweetness, while walnuts added toastiness and honey rounded out the finish. The rosemary aroma in the beer provided an herbal bridge between the fruit and the cheese.

A brewery pub focused on beer and food

Located in Senju, Adachi, Sakazuki Brewing operates as a brewery pub with an on-site brewing facility. The venue serves its original beers alongside dishes including meat preparations, salads, and seasonal food, emphasizing the relationship between beer and cuisine.

This pairing day highlighted that approach through a seasonal combination of fruit, herbs, cheese, and malt. It offered drinkers a way to experience the white peach and rosemary beer not only as a standalone release, but also as part of a complete food pairing.
