Brewing a New Summer Release


Located in COMMISSARY NIHONBASHI in Nihonbashi Honcho, Tokyo, "2杯目のビール." is a brewpub that champions "interesting beer you want for your second drink." Its strengths also include crafting distinctive beers using fruit and spices, and it has proposed drinks that pair well with food.

This time, what it revealed on Instagram is a summer-style golden lager. According to the post, lagers take time to mature, and even slight off-flavors stand out, making them a difficult style to brew. Behind the decision to take on this challenge was the personal feeling of brewer Shimoda: "I want to drink an ice-cold lager from a mug in the summer."

In the brewing process, they used plenty of roasted malt so that the beer still feels like beer and the grain's umami comes through even when it's cold. The post also mentions past failures with pilsners, suggesting that this time they are proceeding very carefully.

Completion is planned for mid-June, with release scheduled for around the same time. Will it finish as a lager you'd want to drink at the beginning of summer, before the heat really sets in? As a new release from a small brewery in Nihonbashi, it's one to watch.
