A New Gelato Idea Using Beer

From the RISE & WIN × TONPUKU collaboration comes the joint gelato “IPA and Yukou,” made with Kamikatsu IPA. During service at KAMIKATZ Beer’s own shop, they made use of the small amounts of Kamikatsu IPA that inevitably remain in the keg and finished the dessert by combining it with yukou from Shishitotora Asano Farm in Kamikatsu Town.

Built on Kamikatsu IPA

The base is Kamikatsu IPA, a popular beer made with Kamikatsu Awa Bancha. It is known for its light, easy-drinking character and the fruity aroma of American hops that evokes citrus. By pairing it with yukou, a rare citrus fruit born from a natural cross between yuzu and daidai, the result is a flavor layered with refreshing citrus notes and a gentle bitterness. The post also notes that one bite delivers a clear beer character and that it contains 2% alcohol.

A Dish That Feels Like Kamikatsu

KAMIKATZ Beer is a brewpub located in Kamikatsu Town, Katsuura District, Tokushima Prefecture. It is known for a style that conveys the flavor of the region not only through beer, but also through food and desserts made with local ingredients and by-products. This gelato is another example: the aroma of beer, the acidity of yukou, and TONPUKU’s distinctive craftsmanship come together naturally, extending the pleasure of craft beer drinking into a post-meal dessert.

In addition to being sold at TONPUKU, it is also being served at RISE & WIN’s Kamikatsu and Tokyo locations, making it a combination beer lovers will want to try at least once.
