MATSURI BREWING, based in Todaijima, Urayasu, is a brewery that has proposed beers that are "somehow nostalgic and drinkable," meant to fit celebratory occasions. Its signature Festive IPA series and JUICY series made with fruit are characterized by designs that weave individuality into easy drinkability.

The new release, "Aozora," is a BLUE LEMONGRASS SAISON (HERBED SAISON). With modest numbers of ABV 5.0% and IBU 18.0, it has been crafted as a saison that goes down easily. Its ingredients include lemongrass and a blue pigment derived from spirulina, making it a beer whose theme is conveyed even through its appearance.

This beer is tied to the project for Akio Morisawa's essay "Aozora Beer." Cascade, Citra, Centennial, and Sorachi Ace hops are paired with organic lemongrass from Egypt, layering grassy notes, citrus, and a subtle woody character.

In the brewers' comments, they explain that in addition to the combination of saison and lemongrass, they heightened the sense of refreshment by making use of the blue color. Compared with the initial version, they revised the color ingredient and increased the amount of lemongrass. By using sugar in a way that keeps the body clean, and by lightening the malt-derived color as well, they say the beer was finished with a crisp profile. Rather than aiming for flashiness, the composition is striking for balancing thematic appeal and drinkability.
