A saison made with local rhubarb

Minami-Aizu Mountain Brewing has introduced its new beer, RHUBARB THUMB. The saison uses a generous amount of rhubarb harvested in the Nango area of Minami-Aizu, with around 80% of the rhubarb used in the beer coming from locally grown green-stemmed varieties.

The base beer is a rye saison with a gentle spiciness. German Callista wet hops were used for the aroma, while the rhubarb was steeped for about one month after primary fermentation. Yeast esters, rhubarb, and hop aromas come together with fresh green notes, soft herbal sweetness, and an orange-like citrus character.

On the palate, the beer brings distinctive spicy notes from the rhubarb and rye, followed by a restrained acidity and bitterness. A lingering rhubarb finish remains after each sip. The beer is listed as a Rhubarb Saison at 6.0% ABV, with enough balance to pair with a broad range of food.
