Sakaduki Brewing, a brewpub in Adachi Ward, Tokyo, announced a "pairing day" on August 12 and introduced a renewed release of its semi-regular West Coast IPA, Natsu no Torisame.

According to the brewery's post, the beer is brewed with Cascade, Centennial, and Strata hops to add more depth to the aroma. It comes in at 7.4% ABV and is built on a caramel-malt base, giving the beer a fuller body and a firm, lingering bitterness. On the tap list, it is marked as a new addition.

To match the beer, Sakaduki served pork gyoza made with back fat and finished with Sichuan-style spicy miso. The pairing follows the brewery's long-running approach of presenting beer and food together rather than treating the release as a standalone item. For a neighborhood brewpub, it is a practical and beer-focused way to introduce a refreshed house beer and show how it performs at the table.
