Sakazuki Brewing Opens New American Pale Ale 'Hibi Dandan'

The name points to an ordinary, calm day, and the brewery says the beer was brewed as a more classic, beer-first option in a lineup that has increasingly leaned toward fruit-driven and higher-ABV releases. It is described as restrained but not bland, with a comfortable balance of hop aroma and malt sweetness.
For the pairing, the brewery is going in the opposite direction: spicy, bold, and charred. The featured dish is bone-in jerk chicken with charcoal grilling and pineapple salsa. The chicken is marinated for three days with allspice, thyme, rosemary, orange juice, and lime, then finished over charcoal and served with pineapple-tomato salsa seasoned with cilantro and fish sauce. Sakazuki says the beer's gentle sweetness and malt character help lift the spice and smoke.
The July pairing-day schedule also includes:
- July 15: Stardust, returning in a renewed hazy IPA form
- July 29: Kemo Rebi 2026 Ver., a sour beer made with super-ripe Nanko plums
A new batch of Shy Girl is also slated to open once the current stock runs out.
