Sakaduki Brewing, the brewpub in Kitasenju, Adachi Ward, has long emphasized beer and food pairing. On July 15, the tap list welcomed a new batch of `Stardust`, a hazy IPA that had not appeared since January.

`Stardust` is brewed with New Zealand hops at the core, combined with a range of tropical hop varieties and dry-hopped for aroma. The brewery notes that a change in yeast made the beer finish a little drier than expected. With its return, the team framed the day as a summer pairing session centered on seasonal food.

The tap list featured 14 beers in total. Alongside `Stardust`, the lineup included a Bohemian pilsner called `shy girl`, an American pale ale, a sake-yeast beer, a saison, a German schwarzbier, a brown ale, and a milk stout. The selection moved from crisp and light styles to darker, roast-driven beers, showing the brewery’s broad range.

For the food pairing, Sakaduki Brewing served a shiraae dish with two kinds of white peach and prosciutto, finished with roasted walnuts. The idea was to match the tropical hop character of `Stardust` with fruit sweetness, saltiness, and a creamy texture. It was a straightforward example of the brewery’s food-first approach, using beer and a seasonal plate together rather than treating either as an afterthought.
